Integrate Copilot with Blink.cmp

- Switch from copilot.vim to zbirenbaum/copilot.lua
- Add blink-cmp-copilot for completion integration
- Configure Blink to show Copilot in completion menu
- Fix plugin import issues

Testing in progress - can be reverted if needed
